if you were to get the other sub, and another 1200w amp there would be a significant increase in SPL. I want to say 6dB -- 3 for double the power, 3 for double the cone area. Now comparing 2400w to 3000w nets less than 1db. So if you're metering, and there's something at stake to make those couple tenths of a dB worth the effort it might be worthwhile to go to a 3000w amp, or pair of amps, otherwise 2,400 to a pair will make a pretty substantial difference in SPL.
Something else you might want to consider - in the 2kw+ range you are probably going to need a high output alternator to maintain a high enough voltage to get that kind of power out of your amps.
