The RF amp you linked is fine. If it were me, a Massive Audio NX4 or NX5 would be a compact option.
speakers are whatever you can spend and whatever you can get - new or used. methods of treating the doors is vital regardless of budget.
the rear is a typical 6x9 hole so making an 8" work will require cutting and it won't mate up well to the rear deck. properly installed fronts should provide midbass. a small sub can resolve the missing low end. in my Camry (linked above) the front speakers are good down to 50Hz and I have a 40Hz high pass on them.
