Would throwing more power at a SE-12

For example going from my current 600.1 to a 1200.1? Or would it smoke it?

I want to keep my box size which is about 1.0 sealed but wouldn't mind the bass being a little stronger. I have a 1200 sitting here and thought about using it with this sub or maybe stepping up to an SX if 1.0 will work for it.

Do it. Why would it smoke it??? As they say, "Watch your gains!!' as though they are saying "Don't say I didn't warn you." The antidote for fear is knowledge my friend. Doubling the power will give you a 3db net gain. Is it worth it to you??? Also, a sub in a sealed enclosure will require more power for the same spl than a sub in a larger sealed or ported enclosure....if I'm not mistaken.

oh and with the SX theres no way to tell because it is a whole different driver and it is SPL oriented but it is safe to say that the SX will take a shit on the SE in loudness
