Would this work?

Just say that I had a DVC speaker each coil being 4 ohms, and 2 channel amp which creates the power I need at 4 ohms(however it is only stable at 4 ohms in bridged mode. My question is, since a dvc 4 ohm can only be wired to 2 or 8 ohms, could I wire each coil to one of the channels of the amp? I thought this might work since my HU only has one sub out RCA so both channels would be getting the exact same signal correct?

Your amp can't be bridged to be stable at 2 ohms? If not, use splitters to split the sub rca as to utilize both sets of inputs on the amp and then run each channel to their respective voice coils...

I think that would work and MIGHT be safe...
