The reason of having a second battery is so that the voltage isnt able to drop as much as it would with only 1 battery

You will be fine with the new 200 amp alt and that battery. Try that first, And if you still have voltage drop, THEN just get another battery.

the extra battery would bring voltage down slightly with the engine running, but help when the engine is off, or when the alts output is exceeded.

I'd say no 2nd batt because if you DO listen a lot with the car off you're going to need a lot more than 1 extra batt to power a 2500 for very long.
