Why does 1 speaker pound but 2 dont!?!?!?

Also I've seen a few times where someone has received a sub with the markings wrong, so try purposely wiring one out of phase and see what happens...
By "Out of Phase" do you mean reverse the polarity? can that damage the sub? Well if I damage it it might be a blessing lol!

 
WARNING!!! The wiring looks horrible because it was a quick connection! You will see other wires not connected because I had another amp and a 8 gauge wire (red) is just chillin, not being used. You will see 2 grounds, the other was for a capacitor but I removed the power from the Cap because I thought it may be causing the problem...

When you're using 1 sub you are running the amp more efficiently:)

Maximum power transfer occurs when your output impedance (load) equals the input resistance of your amplifier. This amp is meant to run a 1 ohm mono load. . .anything else is "up in the air" as far as output numbers. If you run .5 (no no!!) or 2 ohms you're going to be running the amp much less efficiently as it can@ 1ohm.

All this being said. . . I've tried the exact same thing only with a Hifonics Zxi 1006. I had similar results as you. I can say that with my experience Hifonics amps like to be run at their recommended load output. MAKE THAT AMP SEE 1 OHM WITH 2 SUBS AND YOU WILL BE VERY HAPPY!!!!!!!!!!!!!!!//content.invisioncic.com/y282845/emoticons/fro.gif.c695f1f814b01c4ad99fe7f8cccadd29.gif

Won't damage the sub, and yes reverse the polarity on ONE of the subs.

If you have a 9v battery you could test each sub to verify they're marked correctly. Sub should push out when you power it with the battery. If one of them pulls in then it's marked wrong.

Any possibility the 2 boxes/subs are cancelling each other out?

What do you mean by 9v battery? CAr or household, dont laugh...
