some 2" Peerless or Vifa drivers work well in dash/apillar installations. I've tried several and liked them.

with a 2" mid you can go smaller on the tweeter and use a higher crossover point (6 or 8kHz). so then a 5/8" or 3/4" tweeter is sufficient. the 2" drivers can easily play down to 300Hz with enough airspace.
you need to evaluate aiming and placement first. don't assume you'll get it right on the first attempt. what looks good cosmetically might not work well acoustically. I recommend you do some mockups with non-hardening clay before you finalize a fiberglass form. you can even use the clay mock-up as the mold for the fiberglass.
i've tried off-axis tweeters and found they caused a narrowing of the sound stage and also reduced detail for the nearest tweeter. it makes sense from a localization standpoint but you still want the detail.
you don't want/need two tweeters per side as they will interact in a negative way, one good tweeter is sufficient.
