well.. what kinda cookie are we talking about here? if its one of thoughs hard dry chocolate chip ones, no thanks, but if its a gooey warm soft kind.. yea man, i would like a cookie!

Used to run a single SA12 on 1500rms. Did fine. Got hot after a good beating.. but it was fine. Just be nice to it & make sure it's a clean signal.

Yup. 3.5 before displacement per sub sounds better haha, I thought that was for the pair together. That's not too much volume so you should be ok. Make sure your subsonic filter is set good too. I think you'll be fine though.

The box size they suggest is assuming you are giving that sub 600-800w. If you want to run a high power setup you need to make the box smaller to make it less efficient.
