I ended up getting the pair of Hifonics Brutus 12" Subs for my sealed enclosure. Here are the specs on them:

# 12" Dual 4 Ohm Brutus Series Subwoofer

# Power Handling:

* Peak: 1200 watts

* RMS: 600 watts

# Impedance: Dual 4 ohms

# Polypropylene cone woofer

# Stitched NBR (Nitrile-Butadiene Rubber) surround

# Integrated one-piece spider tinsel-lead design

# Nickel-plated push terminals

# For ported or sealed installations

# Nomex spider material

# Anti-resonance magnet boot

# Nickel-plated ported back plate

# 4-Layer high temperature 2.5" dual 4 ohm aluminum voice coil

# 100oz. Double-stacked magnet structure

# Sensitivity: 86 dB

My amp is a Profile AP1200. (I know it's garbage, I just needed something cheap to replace my 1920W Power Acoustik PlasmaSphere when it blew.)

Profile California AP1200 200W x 2 Channel Car Amplifier Model AP1200 Part No. AP1200

California 200W x 2 Channel Car Amplifier

200 watts RMS x 2 at 4 ohms

300 watts RMS x 2 at 2 ohms

600 watts RMS x 1 bridged output at 4 ohms

4-ohm stable in bridged mode

Stereo or bridged mono output

Tri-way capable (Tri-Way Crossover required)

Dual power supply for stability at high volumes

Fuse rating: 25A x 3

Requires 4-gauge power and ground leads - not included with amplifier

Variable filters (low-pass from 50-250 Hz, high-pass from 80-1200 Hz, at 12 dB per octave)

Variable bass boost (0-12 dB) at 45 Hz

Really, my only option is to wire them for 4ohms since my amp is not 1ohm stable? If so, what's the proper hookup for the positive/negative terminals?

First of all, Profile isn't garbage. They actually made pretty nice, budget friendly amplifiers. They're not the best stuff ever, but they can and do get the job done.

I've ran 2 different Profile amps @ 1 ohm, but they're the Baja series. Maybe the AP's can handle it too.

EDIT:

The AP1200 is a 2 channel amp and it'll do around 300 watts x2 @ 2 ohms. And of course it is NOT stable @ 1 ohm while bridged.

So how do i wire the dvc's in the enclosure correctly? Positive to positive and negative to negative?
It isn't going to make any difference which way you run the amp. It will do the same power @ 2 ohms per channel or @ 4 ohms bridged.

So, wire each sub like this:

Or wire the pair like this and bridge the amp:
