Yeah, that's actually pretty common. All of my single coils are like that, it helps with linearity.

because i had the sub wired as though it were a quad 2 wired to 2 ohm final and everything seemed to work fine, i just assumed i was misunderstanding something

Ahh, I can see it now. You do have a quad coil. I couldn't see the other sewn leads in the first pics. The bottom spider also has two sets of sewn leads so even though it looks like the other terminals are cut, they go to the leads in the bottom spider, mang.
