I jsut got some birch, and I can notice its a little lighter, Is it easier to work with or harder?

I've found basically all birch at most lumberyards ****, and the only stuff I've found that I actually like is the Cabinet Grade stuff stuck in the corner at Home Depot, its actually the cheaper stuff too.

The cabinet grade stuff is nice. ~ $25/sheet and it cuts well.
