The SAZ-1000D would be fine as well. The difference of 1kW and 1200W is inaudible.

that's what I've heard but that seems like a stretch. 200 rms isn't nothing.

It's 10% which when figured on a logarithmic scale for sound output is less than a dB and as such inaudible. The 200W difference between 10 and 210 watts is significant but an increase but when you get above around 800w, 200w is fairly inconsequential. In fact depending on the sub(s) in question it might be entirely lost as heat with no increase in output at all.

I ordered 2 cadence zrs 12s rated at 600 rmsbeen shopping for a 1200 mono amp

i was lookin at the AQ1200 but its rated at 14 volts.

The difference between the 2 amps would be negligible especially since they are only 200-watts apart, if that. The sound and output should be almost the same. The are both decent brands so I wouldn't try to steer you towards another brand.

Helotaxi is correct in saying that they would be less than 1 db difference in volume so the human ear couldn't hear the difference in perceived loudness.
