Just because the servers tip out the bartender doesn't mean he makes a ton of money on that. The tipout has to be split between 2-3 bartenders on most nights which ends up around $20-30 each. They still make 80-90% of their money from the tips from their own customers. Like I said, stop being so cheap.

A nice resturant may pull in $5 -8k in a night (just a guess as this is not a very studied issue).

I don't think you're understanding this. The 5% is off the DRINK SALES ONLY if that's the way the restaurant has it set up. Normally it is 3% of ALL sales, but that amount has to be split between ~5 hosts, 2 bussers, and 2-3 bartenders. You're not going to win this. You're just a cheap ******* looking for a way to save $5.

Times have changed
Growing up, one of my best friend's mom was a bartender at a little pub. I'd spend the night at their house Friday and Saturday nights, and she'd come home at 3am with $200-$300 and give us a $50 to split between us for cleaning the house when she was at work.

Keeps it really real.
A majority of bartenders make as much money, if not more, than nurses.... but it's just not a job/lifestyle that I could embrace for the rest of my life.

I don't intend to win this. I already made it pretty clear that I avoid scenarios in which one must tip. I don't think I am going to win over anyone's heart with my frugal lifestyle. But it makes me curious about the tipping policies of all the members who consistantly lament about being broke.
You are correct that I do not understand this tip sharing...I was a bussboy but when/if we got a tip, it was directly from the server, not from any general shared pool. It makes me wonder if I was getting shammed, or that resturant was just different.
Makes much much more sense now. I always felt it was rather unfair for the bartender to get excluded from the tipping process...which is why I tipped separtely. Thanks for clearing that up.

I don't blame you at all. I hate dropping several times the cost of what it would cost me to prepare the meal myself. It's not a very good value at all and I really do not enjoy the experience enough to justify the additional cost. Eating is just not typically an "event" for me. And I rarely, for example, have a steak at a rest. that is as good as I prepare at home.
As long as you don't accept the services and then not pay up I see no problem with it.
There is one exception where I do tip very well...and that is when I go to a sushi bar. But there is a direct relationship between me and the guy at the sushi bar. I always get the "chef's choice" type of nigiri sushi...the more "exotic" the food, the greater the experience, and thus higher the tip. But I consider that as more than just eating, as opposed to a Ruth's Chris/Logan's/etc where it is food you can make at home. I don't have access to those exotic fish...at least not in a practical manner.
