Is 1000w rms overkill

NO, do not exceed RMS ratings, they're there for a reason, so you don't blow your subs... the same goes for underpowering, don't go any lower than the RMS wattage either
having an amp that puts out more than rms ratings of the subs is find, also an amp that puts out less than rms is also fine, its about setting the gain so you dont apply too much power, or setting the gain so you dont apply a clipped signal
