How bad is this?

leave it, theres nothing wrong with running 1 channel per coil. the difference in signal is minimum. someone said earlier to set the mono signal on your sub out, thats good advice. late nite tip gets pretty low, prlly heated up the coils a lot. no worries youre fine

 
there should be a little deal by the channels on the amp that says "bridged" and it will have the positive of one channel being connected to the neg. of the other channel. this is bridging the amp into 1 channel. this gives you all of the power to one channel.. then you can wire your sub down and run it on the bridged channel of the amp.

just because its not stable at 2 ohms doesnt meant that you cant run it at 8. that should give you the same output, in some case a little more since the greater load is easier on the amp.
