Hifonics zxi8006....is it a good amp?

You can. If it were I, I'd leave the rear speakers either dissconnected or run them off of the HU and run two amps (comp amp and sub amp). But your front and rear speakers won't see a whole lot of power. Some 50 watts to each speaker and 200 or so to your sub.

And then put an amp on the sub

If I were you, I'd power the components and 6x9's off of the headunit though and just get a mono channel amp for the sub

 
I have a Hifonics Zues ZX8000 5 channel amp and let me tell you that it won't be enough sufficcient power to run an entire system. (my opinion) Go with seperate amps for your comp's mid's and 6x9's and a seperate amp for your subs. That will be alot better and will give you more headroom than one amp powering everything alone.

ABSOLUTE BEST ADVICE EVER!!!

It should suffice for now, but if you can save just a little more money, go for a Kicker KX700.5, it'll do the rated power, plus some. Unlike the Hifonics.
