Help figuring out which amp I need

First off, it may be kind of a long post. I just want to make sure I get everything across because I'm just a poor boy and I don't want to go out and buy the wrong stuff!

I'm only just starting to learn about car audio, so sorry if these are dumb questions. Also, didn't really know if I should post this under subwoofers or amps forums, since it's kind of about both.

I plan on getting 2 CVX 12". Possibly I may want 15", but I think the cost of the amp will keep me at 12"

Quick info on subs:

12" : 1500/750W, 2 or 4 DVC

15" : 2000/1000W, 2 or 4 DVC

I was looking at the Kicker zx1500.1 to power two 12"s. The zx2500.1 if I decide to go 15"s. Honestly, I think I'll end up setteling for the 12"

Here is where I'm confused. I don't completely get the whole ohms thing. As far as I can see, it's two four ohm voice coils. You can wire them one way and the total is 8 ohms, another way and the total is 2 ohms. Why would anyone want more ohms? So if the CVX is dual 4 ohms and I wire it in parallel, I have a two ohm speaker, right?

The zx series amps are all rated at 2 ohms. So the zx1500 should give 750W to two 12"s at two ohms... right? Or do I have to figure on 4 ohms, in which case I understand that cuts your amp power in half. I want to make sure I'm not underpowering my subs, but I zx amps get pricey after the 1500. I guess I'm open to other amps, I was just looking at Kicker because that's what I've been using. I have to stay in this price range, though. But more than names, it's all the numbers that I'm lost on so any help there is much appreciated.

I thought I knew where I was going with all this, till the guy at the car audio store tried to sell me a $1,400 zx2500.1 and $150 capacitor to power one CVX 15".
