I used 4 trays of my dehydrator for this batch.

Cutting the meat with an electric knife while almost frozen is probably the easiest. If you don't have a dehyd/smoker, you can do it in your oven. Set at 250, takes awhile. For the smoked taste simply add liquid smoke. For the best, use the tenderloin. But, most people do not want to sacrifice the tenderloin for jerky/sausage.
