Got a start on the deer jerky.

Cut up a hind quarter today...And boy does it take a while cutting up jerky pieces with a filet knife. I think i cut the first batch a bit too thick. Got them marinating right now and they are gonna get put in the dehydrator before I go to bed.

This hindquarter was frozen for a while...I am hoping a fresh hindquarter is a lot easier to cut up.

I just hope i don't fk it up too bad.

 
do you make this with some sort of smoker? My uncle makes deer jerky it is juicier, more tender, and tastes better than any store bought jerky. Hope it turns out good. Try making a spicy batch that was always my favorite when it comes to deer.

How long does marinate take? Then how long does dehydrate take?
Marinating for about 4 hours tonight...Recipe says at least 1, preferably more.

Dehydrating takes from 4-20 hours it says..Depending on how much meat, the dehydrator, and how thick of cuts. I imagine this back may take 12-16 hours cause i cut some of the pieces too thick.

Sounds like "Spicy" is on the agenda in the next batch or two.
