For budget minded: incriminator audio 6.5 components do well on blues, country, electronic and rock, acoustic guitars are very present in these and vocals are clear, you'll have to acoustically treat your doors if you want more midbass with any type of speaker you choose..With the 80 prs, you also have the option of going active and building your own component set consisting of silverflute 6.5s and vifa xt25s
Middle end, you got the image dynamics ctx 6.5 and jbl ms62cs, re XXX components, Alpine type X components
upper middle class, you got lower end hertz and hybrid audio technology components. Theres also jl C5s, CDT audio, Phd audiophile systems, and rainbow components.
upper end, there's dynaudio hertz audison, hybrid audio technologies, scanspeak, stage 4 kits from mainstream brands etc but you'll be over budget real quick.
All these speakers will sound wonderful on your 80 prs and will sound even better with sound deadening/door acoustical treatment.

As for substage: KEEP YOUR AMP unless you want to dump money into electrical upgrades then its an endless pit of spending. LITERALLY. you are completely fine with that memphis 1000 watt amp.
For subs these are very nice SQ oriented subs that are loud clean and efficient.

These shallow mount subs work well in sealed enclosures(seeing you might be tight for space) and they hit the highs as well as the lows and you need that upper bass for country. You can keep your current amp and wire em 1 ohm. They'll be louder and sound waay fuller, cleaner and richer then your kicker sub could ever dream of. Kicker and Sound quality normally does not belong in the same sentence.
Definitely invest in a custom ported box if you can spare the space for it though.
