Would it be possible to buy a 3 or 4 ch amp and hook up the 2 ft channels to your front stage and leave the other 2 channels open to later on bridge them for a sub?

Yes.

This is actually a fairly common practice to save on both install headaches and cash.

I'm sure you knew you could use the rear channels for a sub, but yes it is fine to not have anything hooked up for a while. I've been rollin this way for a while since I'm in school and don't have time/tools to build a sub box/money for the sub at the moment/and I can't decided what sub I want/where I'm going to put it/them...AHHHHH!!!!!!!!!!!!!!!!
