Adding earphone jack

I just purchased a very basic Sony head unit, DSXA40UI, which has a USB & 3.5 mini-port inputs. It has L&R RCA outputs on the back panel. I'm assuming these are outputs for connection to an external amp. I would like to know if these outputs can be used to add a 3.5 earphone jack which I could adapt to the front dash area.

In theory, it should work. I would also add something like this so you can further lower the volume independently:
