What is the best way to connect sub to amp ?

Option A

1. Set amp as 2 channel

2. Connect the sub in series and connect the sub to one channel of the amplifier (note that the amp is not mono and configured as 2 channel mode)

Option B

1. Set amp as 2 channel

2. Connect 1 VC to left Channel and other VC to right Channel

Amp specs (2/3/4) channel

Power Specifications - Full Range Channels

RMS Power @ 4 ohms 65 watts x 4 channels

RMS Power @ 2 ohms 75 watts x 4 channels

RMS Power @ 1 ohm Not Stable

Bridged RMS Power 150 watts x 2 channels

Subwoofer specs Dual VC 2 ohms each, 300 watts

I would keep the amp you have and keep the components. Place the components in some universal door pods, and look at getting a powered SAS 8"...

A 6 channel and a single sub amp would be my choice. Or a 2ch, 4ch and a sub amp. You don't need 2 channels for subs.
