Wiring Options

You can wire one amp per voice coil to get 2 ohm per coil, but if you have just one amp, you would need to wire both so that leaves with 1ohm or 4ohm setup

 
Yes, and that is DC Resistance (DCR) when you by a 4 ohm speaker that is its nominal rating, the actual DCR of a 4 ohm speaker could be anything from 3.2-3.7 (just examples)

Your top diagram is 1 ohm (.67DCR) and the bottom is 4 ohm (2.8DCR) check any subwoofer spec sheet, it will list DCR and then Nom. Impedance. DCR of a 4 ohm speaker will be in the 3.xx and it will list nominal impedance as "4"

Your bottom diagram is the only way to wire your amp safely. Now is the amp 2 ohm Stereo Stable / 4 ohm Mono Stable? If so then that amp would b great for that set up. An amp that is 2 ohm Mono Stable would not be optimum for your application, you did not specify that.
