What kind of differance can I expect

If i upgrade my crossfire 600watt amp to JL 1000/ monoblock.

I currently have hte crossfire running at 1ohm to two JL 12w3v2

Will i get SQ and dbs?

That JL cant run at 1ohm so you'll have to wire it to 4ohm...and no, you wont gain any dbs....
