Want to upgrade headunit and amp in Benz wiring questions.

I'm looking to put a new headunit in a 2006 cls500 Benz which has the fiber optic. The headunit I want is one of those Chinese android ones and it comes with a 6m bypass cable to connect the wires but it only allows the door speakers to remain functional. The car has two real shelf speakers, a front center speaker and about a 10 inch woofer in the back. I currently already have two 12s in the trunk that are tapped in and running off a 1600 watt rms amp so the stock sub is most likely not necessary but I wanted to swap a another amp for the car speakers and was wondering what the best way to do this was. A four channel amp and a small 2 channel? Or can I run all 7 speakers off a four channel amp? The existing Mercedes amp is very small and most likely far less powerful than any 200 dollar amp on Amazon just not sure exactly how to wire all these extra speakers.
