i was lookin at the rca to headphone jack adapters, and was wondering if i could use on of those to plug my ipod directly into my amp, and if i got the fm radio attachment i wouldnt even need a head unit. would this work and would it sound as good as a normal head unit?

No, because it wouldn't be sending a line-level output to your amp. It's an amplified signal.
