Trying to hook a sub and rear speakers to one amp... Can this be done?

No since in wasting money to amp rear speakers...

I just figured if I'm gonna have an amp back there already, and am gonna replace the speakers, might as well amp em. But still debating.

I gotta do an install on my cousin's Aztek, and I plan on putting new speakers in the back, with a good 10" sub as well. He wants to conserve space, and there's a pretty tight budget. I was hoping to run the sub and speakers off of one 2-channel amp, probably both the sub and speakers at 2 ohms. Can I do this? Would a 4-channel amp be better? I'm just wondering what my options would be. Any help would be great!

Considering the prices of 4-channel amplifiers, I really don't see a reason to go through this kludge. If you want to save space, get a space efficient Class D 4-channel amplifier. Such as PPI P900.4. The dimensions are something like 10 by 7 inches, and it has a massive amount of power for either speakers or subwoofers (unless this is an SPL setup). If you want to amplify all speaker in the car, consider the 5-channel version, P900.5 or Soundstream TN5.950D.

still debating on that. Stock headunit is staying in, only getting a converter. so I just wanted one set of RCA's.

I was looking into those, and unless I find one used, they're outta my price range. But thanks, I definitely like that idea!
