mesquite can give the food a bitter taste sometimes, my dad owned a BBQ place for 4 years and we always cooked with PECAN to add the wood flavor, believe it or not.

Yeah, my dad uses pecan when he makes his briskets in the smoker. Doesn't taste good unless you're using either indirect heat, or cooking for a long time. The key to the mesquite is to soak it for an hour in hot water with about a tsp of vinegar added. Dunno what the vinegar does, but my grandpa did it, and now me and my dad do it. Flawless errytime.

 
Id skip the lighter fluid and get a chimney starter, not a fan of that petroleum taste.
If you don't soak the charcoal in it for days on end, you shouldn't have any petroleum taste. The matchlight charcoal, however, does give a lighter fluid taste.
 
1. Purchase charcoal2. Assemble charcoal in grill in tall pile, not spread out

3. Douse in lighter fluid and light

4. Wait till burns down to white ash

5. Add whatever food you wish

the only other thing i would add to this list is use some good wood chips the smoke from the chips makes it taste even better. and people please marinade the flavor in good bbq DOES NOT come from the sauce .

shoulda took a pic of the bbq yesterday had that thing loaded ribs, brats, chorizo you name it . every single person who came by was like... **** that smells good. must have been good people had trouble standing up they ate so much lol.

4 keep temp between 190 and 250 for many hours

The key to successful wood chip smoking is to soak the bastards in hot water for a long time. That way, they give a nice moist and smooth smoke, instead of just burning. Another good thing that I've done, albeit not very practical, is to take a large bowl (metal ONLY), fill it with coals, cover the coals with woodchips of choice (I recommend a light wood flavor, such as cherry or apple), and lay skewers of shrimp on top of the chips directly. Cover them with another bowl, an you've got the best smoked shrimp ever. Key is to leave the shells on the shrimp though, but deveining them is also crucial.

No, it's annoying when I have to re-read simple words that are stuck together because people don't use spaces and apostrophes correctly. A job interview isn't English class, so it's okay to use shitty grammar in your resume?
