Running RCA wires

It all depends on what control you want / have from the headunit.

If you are just going to use the crossovers on the amps then 1 RCA run would be fine.

With how cheap active HU's have become the old school way of using the filters on the amps is dying out, IMO

The main reason to use three different sets of RCA cables is to maintain balance and fader at the head unit. It also allows for sub level control through the head unit if your system is equipped with a subwoofer. If you don't care about having control and changing levels then it isn't necessary for the system to work.
