Removing the head unit in a Chevy Avalnche

A friend of mine wants me to install a pair of 12" subs and an amp into her new Chevy Avalanche. I have installed quite a few stereo systems before but never with the factory stereo. So my questions are: Will i be able to use RCA cables? or will i have to use Speaker level inputs? if so how do i wire those (never gone that route)? Also has anyone ever taken the head unit out of an avalanche? what is the correct procedure for removing it to wire the amp to it?

 
use the speaker level inputs on the amp and connect them to any speakers to get the signal. rear speakers would be easyer or

if your removing the hu. you can get the signal on the back of the hu and also get the power for the remote turn on wire for the amp
