Fatmat and Rammat deaden by "mass loading" (adding weight to something) That weight alone is what you're using to lower the resonance of the panel. eg., a 1 oz piece of sheetmetal may buzz, whereas a 4 oz piece of sheetmetal the same size may not make a sound.
Remove and tap on the sidepanel on your computer case.
Tape a magazine to it
Now tap on it again - Notice the sound difference?
Great Stuff doesn't weigh a whole bunch, but if you can use it to add some pressure to the panel, the resistance will in fact deaden the natural resonance of the panel.
Like the magazine test above; Instead of using a magazine (fatmat), imagine pressing a big sponge to the other side of the panel. The sponge isn't gonna do much by itself, but with that pressure (since the foam expands) it works - even better, in some applications.
As far as warping your panels, if you use some common sense, that's not to be a concern.
What you may want to keep in mind though, is that the stuff is porous, and can get water trapped in it - thereby contributing to rusting your panels.
