Legal Question : Verbal agreement legal binding in NC?

So theres a couple ponds around my house. My grandpa owned all this land and sold some of it to this guy whos a jackass. Its around 100,000 acres and theres a few ponds on it i used to fish in. They had a verbal agreement that if he did sell the land any of his grandchildren could fish in it or whatever when they wanted. One day i decided id take my gokart and ride it around in one of the fields my grandpa sold to this guy. Laid the grass down some but didnt do any damage. Guy takes me to court for trespassing, saying the verbal agreement never happened and i destroyed his property. Charges got dropped due to no proof i was on the property.

Talked to gramps and he says hell back me if i wanna go fishing again, i honestly havent bothered as that was years ago when i did that. But im thinking about just going fishing there again, and seeing what happens. What chances do i have in the verbal agreement holding up in court if he decides to be an ***? I have 3-4 witnesses to the agreement they made.

Another good thing is had the land surveyed, my property line actually goes across his driveway to one of the houses off the path i live down. I can put up a fence clean across the path if need be, and hell have to make a path somewhere else. Lulz. Im thinking of using that as leverage

 
nice bump...but yeah that sounds like a pretty bogus agreement anyway, pick a new pond and i would've already fucked his driveway up over the court deal
