I've never hooked up a mono amp with a high level speaker connection. Actually any amp. I've always replaced head unit and then used RCAs.
My kicker amp which has high level connection says to cut included RCAs and connect to speaker wire.
How each set of RCAs has 2 plugs. Do I splice them together, use only one side or use a y connector?
Im lost. Be nice im 60 and its been a while.

Cut off RCA ends... leave about two inches of wire. If you ever want to re-splice them, you can. Each RCA is two wires. Hook once pair to a left speaker in the car and the other pair to a right speaker in the car. This will insure you have full left and right signals. Should be pretty simple to wire up. You will probably need some extra lengths of wire depending on where you mount the amp.

Connecting Speaker Wire to RCA Wire for High Level Amplifier

It would probably be easier for you to purchase an adapter. Amazon, eBay, or Walmart.

If you want to DIY, cut the RCA cable and connect the red wire to the positive speaker wire, and the black or while wire to the negative speaker wire. (Most are color-coded, so make sure you purchase that type.)

There are also some YouTube videos on how to DIY.
