Theres a wire on the HU harness called power control (when using the optional power amplifier, connect to its power control terminal). Do I wire it to the remote turn on on the aftermaket amp and the wire harness from the old to new wires?

wires directly to amps remote turn on

But I also have a wire harness that converts the factory wires to the aftermarket wires that has a remote turn on wire in it. Do I wire all 3 wires together?
No. As your amplifier isn't part of your vehicle's factory wiring harness a lead that feeds into the factory harness isn't going to help out your amp at all.

Disregard that lead in your factory harness adapter altogether and wire the lead coming from your HU's harness (the one coming out of the back of your stereo and not the harness adapter or any of the vehicle's stock wiring) to the remote activation input on your amp.
