Head Units and Hi Volt Pre-outs

Nothing, except will allow for less of a chance of noise being inducted into the signal line in an environment that has quite a lot of EMF/RFI.

It also allows you to turn the gains down on the amp. This may lead to cooler running, better dynamics, less noise production and may make the system seem cleaner.

With my current setup, I can hear a hissing noise in the background. The only way to get rid of this is to lower the gain. If my headunit has a higher pre-out volt then will this noise go away?

It should, though make sure that is where the noise is coming from. If the noise is from something else in the car, the noise may go away with a component swap.
