There's good shallow mounts. Sundown has one, SSA, Digital Designs (it's hideous though)

Sundown recommends .5-.75 for ported per sa8. You should be good.

well after seeing a few videos I think I am going to go with the 8s any amp recommendations for them?

Also seeing as they are going to be forward mounted any way to get some speaker covers on them?

I'm not sure if there are covers for them. I'd get the Soundqubed Q1-1200. Get the subs in 4ohm, wire them parallel to get a 1ohm load at the amp

You can probably make some. Like I said though, the sundown subs have that huge clown like surround. Test the excursion on them first. Downfiring might be an option too. They are pretty beefy subs though, I'm not sure how deep they are

If you plan on doing downfire, you'd have to get the sundown SD-8s, the magnets on these SA 8s are huge.
