does this sub and amp go together?

The 800 watt number for the Boss amp is peak. It's 125rms x 2 for 4ohm load, they don't state what rms it can do at 2 ohms but it won't be enough for the subs which are rated 400rms each. Boss amps are not reliable and they overstate their output. I would definitely consider another amp.

The subs are a dual 2 ohm model. That means each sub can either be either wired for 1 ohm (in parallel) or 4 ohm (in series). So find an amp that will drive the subs at those loads. A mono amp that can do around 800 rms at 2ohms would work well. You could wire each sub for 1 ohm, then connect the two subs in series creating a 2 ohm load.

 
About $100, but I'd like to spend around $75. Is that too little? I like Stel's idea about getting a mono amp and wiring each sub at 1 ohm (even though I have no idea how to do it).

100 is a little on the low side to get a nice amp. If you want to spend 100 then this will probably be your best route http://www.ikesound.com/product-product_id/4991

Those crunch amps arent top of the line, but they are good budget amps. I read a thread not so long ago where a guy bench tested the PZI 1500.1 around 1300 watts at 1 ohm, which is very respectable for the price.

Profile also puts out some good budget amps, but they will run around the same price as the crunch's.

I would recommend saving a little money and getting something nice, but if you want something now, those are two good options.

As for the wiring, there is a sticky for voicecoil wiring options you should read if you want to go the route stel was talking about.

The first amp you linked me to says '500W x 2-Ch @ 2-Ohms or '. Does that mean each 2-ohm sub will be supplied with 500W or 250W?

I may just consider getting 1 sub and a cheaper mono amp to save some money, do you think that would be a waste?

One sub with a quality amp might be the best way to go - especially with your budget restrictions.

Don't forget - a 4 ga wiring kit, and a decent enclosure for the sub don't come free either.

x2... if you let us know what your complete budget is and what type of setup you want (sq,sql, or spl), i think we can put together something nice for you.

 
sorry, the amp will cost a lot more for one that will last you. the one i will be getting is about $300 shipped and im running the same subs as you. so i would suggest save up for a good amp.
