difference between a 2 and 4 channel amp?

Usually a monoblock amp is used to power subs, (.1), but there are stereo amps that power subs also.

Depending on the amp it can power the entire system, ie Memphis belle's.

But from what you're saying I would guess you got an amp for your comps, not for subs.

That amplifier will technically work, since the subwoofers you have are SVC 4ohm subs. Just bridge one pair of channels to one subwoofer, other pair to the other sub.

How well that amplifier will physically power the subwoofers depends on which series of Memphis subs you purchased.

Also you would need to lowpass the subwoofers externally from the amplifier, such as with your headunit, since from what I've read so far it appears that channels 1 & 2 on that amplifier can only be ran fullpass or highpass, but not lowpass.

it will most likley sound like shit that amp puts out 125 rms to each sub when bridged to 2 channels the subs handle 250 rms each look at a Profile HA700M you would be a lot happyer it will push 350 rms to each sub but you can turn down the gain and you can use the amp if you ever upgrade to diffirent subs
