can kicker KX amps accept 7v in?

It's ok whether or not it says it supports it. The voltage from the headunit will only be as high as you turn the volume knob.

It just means that you need to set the gains (or leave them all the way down) at a lower volume percentage.

My headunit has 8v outs and one amp accepts 8v at max and the other 4v. The 8v amp actually has its gains at roughly 40% while the 4v amp has its gains set almost at 0. The 8v amp is running my mids and highs and it is distortion free as seen on a scope.

So really, just hook it up and set it by ear; you should be just fine.

 
Usually to get the rated output voltage, you have to max the bass boost, turn on the loudness circuit and accept a large amount of distortion cause the outputs are on the verge of clipping. I wouldn't worry about it unless the max input voltage was something like 2V (it isn't).
