big three fuse

ok so i have a mechanic that does all my work for free because i help him so i can learn but.I mentioned the big three and what it is bla bla bla but he told me that i need (like a must to keep it from frying) to fuse the wire from the alt to the bat well if i do that what size fuse should i use

 
yeah well what kinda sux i think my alt might go out soon because one day it will run doing 12.5 the next 14.4 it not consistent(im talking about idle to)

 
i did my alt to bat with a 250a fuse. 1/0 gauge wire is (roughly, i can't remember the exact figure) rated for 350a and i have a 240 amp alternator. it's never blown on me, and in the event of a short to ground, a LOT more than 250 amps is going to be coming through that wire.
