Best amp for me?

A GT5-12 should be ok to use with that AMP? And also is 8 guage wire fine
I can't comment on the output of that amp, but seeing as it has two 20A fuses it doesn't do anywhere near 1200W, maybe half that.

If you're using two 4 ohm woofers that can handle 275W RMS each you'll want an amp that does somewhere around 550W @ 2 ohms (two 4 ohm coils wired in parallel gives you 2 ohms final)

The mrp-m500 mentioned earlier would be a great match if you could find one.

If you're really drawing 500W + I'd go with at least 4 ga CCA from Knukonceptz, unless the battery is right next to the amp. Check out this chart:

I can go with a Rockville rxdm2 since I changed my mind about getting 2 12 as they can't even fit lmao but 1 12 jbl can but it's 1100w and that amp is like way over

 
The sub isn't 1100w. That is a peak power rating. Peak/max power ratings are meaningless.

It is a 275w rms sub.

The Rockville amp is a decent match.

It is 400w rms at 4 ohms -- quite a bit more power than your gt-5 would need.

However, it isn't unreasonable.

If you listen to us, and don't crank the gain setting way up and keep the bass boost at zero the amp will work well.

If you choose to be an idiot and crank the gain and bass boost you'll probably blow the sub pretty quickly.

Since the amp is more powerful at lower impedances it will still be useful if you decide you want to upgrade your subwoofer.
