Amp Output > Speaker Output

As long as the amp can drive the speaker to the level you want without clipping, it doesn't matter.

I used 2 watt amps on 100W-rated Klipsch towers.

I guess what I am asking is I am curious about getting a 750W Max RMS amp for 300W subs...I suppose as long as I don't crank the gains and set it properly there should be no harm, no foul.

See how low you can get it to go into that 300w area. Depending on the power handling of the sub, it should take some more clean power just fine.
