Using as a second battery, how much power can you run off these?
It's very install dependent, and there's no definite answer. It depends on the size of your stock alt, the battery you're running up front, if you've done the Big 3 or not, if you have adequate wiring, how your amp is set(clean vs clipping), and what kind of music you listen to, how you listen to it, and for how long. Assuming your stock charging system can handle a 1kw system, add one of these for every 500-750watts more than that and you won't have to worry about the voltage dropping once your amps get past your alternator.

I have never run DataSafe batteries or a 6th order. The batteries I run are about anywhere from 3x-4x the size of these each.
Sorry about that man, but I remember a truck with some Fi Q's in a 6th with some huge Datasafe batteries. Can't find the thread now, but eh, it's not that important I guess.

whats the CCA on these? I don't have alot of room for an aftermarket battery in my location. Seems as though I need a 34/78 series but that might be too big.

I'm not sure since DataSafe doesn't give a CCA spec. If you're using it as a secondary battery, then CCA is a pretty useless spec anyways.

3000 watt, big 3, alt. 140a at 14.8v idle, will one of these be enough as a second? I live in the cold and will be getting a good front bat. soon?

Nope, looking for one to be used as starter/stereo.
If this is a generic Batcap 2000 then yes it can be used under the hood, according to the fact that Ray recomemded a Batcap 2000 as a replacment under the hood. I am still looking to buy one or two more Batcap 2000s when I have some extra $.
