2 10's from 1 12?

I currently have a 12" L7 ported running off a PDX 1.1000 in my Tahoe. I'm thinking of switching to 2 10's ported keeping the same amp. Would there be a difference in sound? I listen mainly to hip hop but I like tight sounding bass and not so much boomy bass. Would 2 10's give me the sound I'm looking for?

Tight and punchy vs "slow" and flabby bass is the distinction between uppler sub bass/lower midbass vs lower sub bass. Both can be legitimately part of the same recording. An idea subwoofer setup should be able to reproduce both. If you're looking for a tight and punchy subwoofer, then it is better to go with a sealed box setup. I think box type will have a bigger impact on this than the size of cone. In sealed boxes, bass starts rolling off somewhere at around 60-80Hz. This rolloff combined with vehicle's cabin gain provides a flatter response in cabin than a ported setup. Ported setup has flatter response curve curve outside of vehicle but often exagerated deep bass inside a cabin.
