The wine is caused by different resistance at your ground points. As the last two posters said check/rerun your grounds.

Look at your subs when playing at a low volume to make sure one sub isn't flexing more than the other. It probably is that you are just used to the improvement. In the 5-6 systems I have had, after time no matter how loud, I eventually wanted more because it wasn't loud enough.

I would say stick with the Brutus 1000w instead of Nemisis 750w. Use a voltmeter to set the gain so you don't overpower the subs. Like supra said keep the gain down and everything should be fine.
