There's a lot of things considered fact that cannot be proven. Take the law of gravity as an example. It cannot be proven, it can be demonstrated, but it cannot be proven that our definition of what gravity is and how it works is correct.
It's not that hard to imagine that some of our base knowledge and "ideas" about science right now could be proven incorrect in the future.

A law and a theory in science are a completely different thing, a law is something that there is enough information that proving it to be true that it can not be proven wrong. A theory means that there are some gaps in information that make it possible to prove wrong. Example is the Theory of Evolution

Then Gravity is in fact a theory because all we can prove is that we don't fully understand it.

The reason it is a law is because there is no way to prove an alternative explanation. We may not know why it works but it works and can be predicted accurately. If there was another explanation or series of equations that worked to predict gravity accurately then it would not be a law.
