Why not to use a capacitor?

used correctly a true capacitor setup will condition the power into the amplifier by smoothing the ripple effect. using a cap as a substitute for power is the wrong way to implement 1. if you have more electrical than you need then a cap can be beneficial, however w/o an RTA you will never notice the difference.
Which is completely unnecessary since any decent amplifier will have more than enough internal capacitance to smooth out the incoming voltage.

That depends on the design really, for example people get terrible results with mmats amps because there designed with very little capacitance.. If tour PS is up to par they do great but guys run 2 batts and a 180 amp alt on the 3500.1 and wonder y they dint preform great like dd z designed for those types of apps..

Hence adding the caps to the older dhc's gave alot more power..

On the opposite the new punch amp has 10x the cap needed it draws current constantly even under no demand to keep the cap bank charged.. After you deplete it's cap it draws amperage you would normally from such a large amp..
