What would you do?

IMO subs are best in pairs, least for asthetics and such. Looks like your amp would have no problem pushing 2 of them as well, and I'm sure you got the room. I would say go and grab the second one and be shooting with 2 barrels.

After looking for specs on the pioneers I could not find anywhere any recommended specs for a ported enclosure. I'm just wondering how they would work in one as they appear to be designed solely for small sealed spaces.

In any case I say at the least go for the 2 and fill up all the space you got behind you seat:up2somet:

 
Pioneer has a ported enclosure design listed in the manual. I'm not sure of the tuning, though. At 0.8 cf per sub plus port displacement, you could probably get a pair of them behind the seat.

I drive a regular cab and have looked into the shallow Pioneer subs for my truck but haven't found one to audition in person. Aside from the issues with the volume, what's your opinion on their sound and extension? I don't really need them to be that loud, but I do want them to get low.

Just tossing this idea around...

Keep my one 12" get 2 8" versions of the same sub and wire down to 1 ohm. in a sealed box.
