So let's hear some of your prerequisites for even thinking about applying to CalTech, Harvard, MIT and the like? You're in the top 1% of your class? Good
You did well on the SATs (1450-1600 range)? Good
You're gonna take some SAT II subject tests and probably do well? Good
You're taking the highest level classes your high school offers? Good
You have some extracurriculars, maybe President of a club, captain of a team, involved in church, etc? Good
But so does everyone else that doesn't even consider going to those schools.
You're not an elitist? Well then start looking for some different schools.
Don't believe me? I would go on about myself - I was in your boat last year - Valedictorian (550 graduating class), captain of varsity basketball team for 2 years, President of NHS, 1420 on SATs, 33 points for my International Baccalaureate Diploma, 5 on ap calc, 5 on ap history, and 4 on ap english. Where am I? Clemson University in South Carolina. Good school? Absolutely. Harvard, MIT, CalTech level school? You can answer that one.
My point is that schools like that really don't give two shits about your SAT II test scores unless they **** because everyone who they consider has 750s - 800s in whatever subject they choose.

Check out these couple, and look at what they've done, where they're going to school, and then look at what you've done.
Not to shit on your college choosing parade, just hoping to point out that the 9% acceptance rate of these schools is for a reason, and if you think that making sure you take the easiest possible SAT II tests will help you that much, you have another thing coming.
